ORIGIN:
In Pelago (FI) from our 10 years old vineyard “Le Piagge” oriented SSW and 40 years old vineyard “Casellini” with same orientation. Altitude 360 – 420 m.
SOIL FEATURES:
Clayey ground in rocky framework from Sandstone break up in “Casellini”, limestone in “Le Piagge”. Neutral PH.
GROWING SYSTEM:
Tuscan Reverse cane pruning 3500 plants/ha in “Casellini”. Guyot 7000 plants/ha in “Le Piagge”.
GRAPE VARIETIES:
Canaiolo 80 %, Sangiovese 20%
HARVEST:
Manual harvesting with grape selection on first half of October.
Fermentation and extractive maceration are done in temperature controlled French oak vats with daily manual punch down and remontage for soft extracting of all the grape’s precious components. Wines fines naturally in 15 hl untoasted French oak vats for at least 6 month until blending and bottling .
