HARVEST:
Manual harvesting with grape selection on first half of October.
After a soft pressing and fast settling of the must, fermentation is done in temperature controlled stainless steel vats as well as fining and cold stabilization. Wine is bottled in springtime to keep its natural freshness vivid.
