From our 10 years old vineyard “Casellini” oriented ENE-WSW, altitude 360 – 380 m.
SOIL FEATURES:
Clayey ground in rocky framework from sandstone break up. Neutral PH.
GROWING SYSTEM:
Guyot 7000 plants/ha.
GRAPE VARIETIES:
Sangiovese 100%
HARVEST:
Manual harvesting in first half of september choosing lightly underripe bunches.
Vinification:
From soft pressing of the grapes a rosé must is obtained which ferments at controlled temperature not exceeding 20°C in stainless steel vats. The base wine obtained, with a marked acidity and freshness and a low alcohol content (about 10.8% vol.) is bottle-fermentend in March 2021 and left to rest on the lees for at least 2 years. Manual disgorgement with dosing of sugar took place in April 2023.
