HARVEST:
Manual harvesting with grape selection on first half of September.
Vinification:
Fermentation and extractive maceration are done in temperature controlled French oak vats with daily manual punch down and remontage for soft extracting of all the grape’s precious components. Wines fines naturally in 15 hl untoasted French oak vats for at least 6 months until assembling and bottling.
Production 700 bottles.
